Stack of healthy spinach protein pancakesSpinach and pancakes, you ask? Before you go running for the door, consider giving these simple yet nutritiously delicious pancakes a try. Much like a smoothie, the other ingredients quickly hide the taste of spinach, and the same happens with these pancakes. The spinach flavor takes a backseat and you're left with a nice, slightly sweet pancake packed with protein and whatever toppings you desire.

Try this recipe for a quick breakfast, or even after a workout. The pancakes only take about ten minutes to prepare and cook.

Ingredients

  • 1 egg
  • 1/4 cup of rolled oats
  • 2 egg whites
  • 1/4 cup fat-free cottage cheese
  • 1 teaspoon baking powder
  • 1 scoop of vanilla protein powder
  • Handful of spinach

Directions For Making Spinach Protein Pancakes

1. Place all ingredients together in a blender. Blend for 30 seconds, or until the batter becomes thoroughly mixed.

2. Turn on the stove to medium heat, then melt a tablespoon of butter in a frying pan or griddle.

3. Pour batter into the pan or griddle and flip after about 25-35 seconds (or until lightly brown).

4. Serve with nut butter, syrup, or any other toppings you desire. Keep in mind that the addition of toppings will change the nutritional information.
